We bought this cookbook on a whim (we liked the title) and have found it is now the first one we reach for when company is coming or the kids are tired of chicken and mac-n'cheese. The recipes are easy to do, many can be prepared in advance, and the author makes life easier by recommending accompanying side dishes and desserts. Every recipe we've tried has been a "winner". For a family on the go, this cookbook has made having a real dinner possible!

We were given this book by a friend several years ago and it is a staple on our shelf, to the point that it is starting to fall apart! Every recipe has been fairly easy and delicious, received "rave" reviews from the diners on hand, and everyone to whom we've subsequently given the book has said it is one of the best. This is definitely the cookbook to have on hand when you need to whip together a meal, don't want to spend more than an hour doing it, and still have it taste like you were in the kitchen all day. It is the only "published" cookbook that comes with us when we go on summer vacation.

I must have recipes for anything I cook. I cannot just go the cupboard, pick out some ingredients, and dream up a meal.
This cookbook is quickly becoming one of my favorites. Every recipe I have used thus far is great....would serve to company. Plus, she makes nice suggestions as to sides to serve with the entrees. I am so happy with this book that I have now ordered her cookbook on Pacific Coast recipes.

I was interested in casseroles because I wanted recipes for dishes I can make ahead and freeze. This book exceeded my expectations. It has all the old favorites like tuna noodle and new ones like Osso Bucco. It even has a section on lower fat casseroles and a section on making recipes healthier. Every recipe I've tried has been a winner and have received lots of compliments. Some of the recipes are one dish suppers like Salmon and Peas, very tasty and easy to prepare. What it lacks in photos it makes up for in creativity.

The recipes in this cookbook are fabulous! I bought this book a few weeks ago and so far have made the: Basic Chicken and Dumplings, Spicy Beef Enchilada casserole, Super Stroganoff, Classic Hungarian Goulash, Pork Chops in Mustard Sauce, Lamb-Vegetable casserole, Rotini & fresh basil with pinenuts & cheese casserole. Everything blended well and was easy to make. I prepared a lot of these dishes in the morning then baked them at night. I highly recommend this book. So tasty!

Don't expect color photos here, but the dishes are quite simple to put together and contain a complexity in flavors which challenges the traditional image of the overcooked and under-flavored casserole result. From Beer Beef Stew with Parslied Buttermilk Dumplings to Baked Tandoori Chicken on Lentils, Big Book of Casseroles is filled with appeal.

We have enjoyed many of the the easy to prepare recipes which emphasize the natural flavors of fresh fruits, vegetables and meats from the area. Recommend it highly and I am from Texas!!

The best feature of this cookbook is that it uses simple ingredients. I especially like the soup and salad (and salad dressing) recipes, though I have also had success with the main courses and desserts. I have given this book as a gift to several of my GenX-aged friends because the recipes are simple enough for beginning cooks, but my mom and their moms seem to like it, too.
