Great delicious & nutritious recipes
This is an excellent book for those who are seeking both a delicious & nutritious breakfast. Since trying these recipes, I feel better & have more energy throughout the day. Most meals are easy to make, but some require exotic ingredients.

The author starts out by discussing proper nutrition & some of the ingredients used. The recipes follow including cereals, eggs, breads, pancakes, toppings, soups & drinks. Elegant & kid pleasing meals are also included.

There are even special chapters focusing on heart healthy & lean hi-energy meals, as well recipes for those with allergies. Some of my favorites include Rhode Island jonnnycakes & orange spice popcorn waffles.

My kids love the breakfast cake & milkshakes. My only complaint is some of the recipes are not low-fat. Quite a few have over 7 grams of fat, & others contain up to 19 grams of fat per serving.

Worth the BIG price for such a LITTLE book
What makes this book extra valuable is it's introductory material on WHY the recipes in the book are healthful and it's glossary-like listing that details the benefits of particular ingredients. Also unique; there is a chapter devoted to "meals-in-a-muffin" with unexpected recipes (rice & bean muffins, muffins w/veggies...)that defy traditional muffin making. Every recipe I've tried has been so yummy, that, per suggestion of the author, I've taken to baking in bulk & individually wrapping my muffins to store in the 'fridge/freezer!

Cooking Kosher the New Way
This is a very usable cookbook with a nice mix of recipes: everyday and holiday; international and familiar; quick and time consuming. Ms. Kinderlehrer's style is engaging and her credentials solid.

Extremely useful book for health conscious kosher cooks.
I have used recipes from this book since 1983, when friends gave me a copy. Alhtough there is still a lot of smaltz (rendered chicken fat) in the recipes, one can easily substitute olive oil. Jane's easy going style of "sneak in the nutrition" is especially encouraging when getting your family to eat healthy, kosher food. Some of my all time favorite recipes are from this book. I also recommend reading her "Sneaky Organic Cook.." book, as it will help those in transition from white challahs to find alternatives for their families.

Healthy, but not easy
Jane Kinderlehrer has a lot of creative ideas for muffin recipes, but many key ingredients are obscure (lecithin granules) or take extra time to prepare (a special concoction of seeds & granola). Many healthy items are used as additives, put into many of the recipes, rather than with an eye toward creating a uniquely delicious item. I guess if you're looking for how to sneak in lots of nutrients when you bake, this book might be helpful.

The healthiest and best tasting
I've never done this-write a review. But someone gave this book only 2 stars, and that really bothers me. The author's other baking books, now almost impossible to find, were very highly rated, and rightly, and this one is the best of them all-and comprehensive.
Oh, yes, there are a few ingredients you'll need to buy at a health food store. BUT, well worth the trip.
Bake up a batch of her wonderful muffins, and watch your kids devour them as mine did. I made a batch of the apple pecan, by choice, to start my family off on a cross-country trip-they are special.
The cookies are unbelievable. The baked goods too.
There are many ideas for substitutions, and many ideas for those special needs-like diabetes, coronary artery disease, allergies (the wheat-free, egg-free, sugar-free, low-fat, etc.) AND everything not only tastes good, but also is good for you, loaded with nuts, seeds, whole grains, fruits, vegetables....
Easy to follow instructions, flawless recipes. Delicious results, for those of us who don't eat white bread. For those who do, expand your horizons.
Really, this book is a stand out in health-oriented baking-I should know, I've bought them all. I can promise you two things: one, you will not like every recipe, some you won't even try; and two, you will love most of the recipes and find yourself making them again and again.
