I get raves for my breads using this book.
Since I moved to a small town in Arkansas I've been baking my own bread and this is the best cookbook I've found for sourdoughs, challah, pizza dough, Italian, etc. I made the SourDough Rye and the Potato Rye (minus the onions) for the holidays this year and they were just like a NY or Chicago deli! You can get his special flours from King Arthur catalog to be really authentic.

Best bread book in my collection
There are a number of excellent bread books but, for me, this one has it all. The instructions are clear, concise and the recipes have been well-tested. So far I have tried: Challah, Pizza, Sour Rye Bread, Corn Bread (absolutely delicious), Black and Whites (better than from the bakery), Wine Loaf, Bagels, French Bread, Sourdough French Bread (a family favorite) and am about to try Pumpernickel. I have had perfect results every time. Whenever I am looking for a new recipe, this is the book I reach for and if I have a similar recipe in another book, I gravitate to these recipes instead. There a "reading" baking books and "baking" baking books. This is a "baking" baking book and an excellent one at that.

At last - really, really crusty bread!
At first glance there isn't much to grab your attention in this book. No glossy colour pictures (in a cookbook, unbelievable) and the recipes look basic (a little yeast, a little water, a little flour...). But you REALLY have to read this book. The details, the tips, the tricks of the trade and the methods that Greenstein explains really do make a difference!

Greenstein has converted the recipes to be made by hand, food processor or mixer. We have a small mixer and simply halved the quantities. I cannot stress enough the surprise at how effective the results were. There was huge "WOW" factor getting the bread out of the oven.

This book has a good range of recipes for breads and things made with yeast. There is an assortment of ethnic recipes and all the favourites from bagels, foccacia, croissants, to scones and muffins. I particularly enjoyed his annecdotes and favourite toppings. Greenstein has also included 12 programmes for "a morning of baking" which set out how to fit together making a variety of breads in a short time.

On the downside, a separate ingredients index would have been useful. For example, after buying rice flour I then had to look through the whole book to find the relevant recipe. The fact that it is so short on pictures is not really a problem as the results speak for themselves.

Please God, when I die let me be Jewish!

A riveting journey
Although Greenstein's book is somewhat ancient, it remains the most exhilarating exploration of black holes, quasars, pulsars and other phenomena I've ever read. If you want an easily digestible introduction to some of the most fascinating aspects of our universe, you cannot do better than to read Frozen Star.

Excelent source of understanding
This book truly explains many physical concepts of the mysteries of our universe. It goes in depth explaining in detail pulsars, black holes, and starts, but brings these concepts to an understandable level. The examples presented give a full conceptual understanding of our universe. One can picture what is happening in a black hole through labeled drawings rather than complicated mathematical formulas. This book did a great job of explaining all the aspects of space-time geometery for which I was looking.

Good for intuition and interpretation
This book, is like having a physics proffesor tell u what is Quantum Mechanics, "Forgets your a newbie Student". It tries to bring u the basics but relies on prior knowledge of it ?! Allthough it is updated (unlike older QM books) and gives you a good perspective of the theory. The first 3 chapters are clear more or less ( Still with prior knowledge ) but the rest relies on very advanced knowledge. Not a good book to start with. Usefull if you have firm foundation of Quantum M. and want to contemplate the interpetation of it.

The Quantum Challenge
This is the best book available, by far, on experimental results of the quantum measurement problem. It is one of the few books that are beyond popular accounts, which generally do not have the depth necessary to understand the measurement problem, and - on the other hand - very technical quantum optics volumes. I give it my highest recommendation for anyone with some science background to become acquainted with the quantum measurement problem in detail. It is a triumph and comprehensive in its coverage and reference to quantum measurement experiments. Every scientist should read this book.

Almost There or Requeim for Empiricism
The top of the metaphorical mountain is in sight, watch for theologians. What I found most enlightening and refreshing about this book is the open way Greenstein discusses his own and other scientists' innate prejudice to the data scientific inquiry is providing. There is a crisis amongst the atheist intelligentsia. Evolution cannot have happened as it is taught in public schools (slime to man). They all know it, as clearly described by Greenstein, but as someone said, "We have to believe in evolution, even though it is impossible, because the only alternative is creation, which is unthinkable." The problem is how to avoid the dreaded "God Hypothesis" when every field of science confirms Intelligent Design. Greenstein's thesis is, essentially, that the universe evolved Man so that Man could become the observer, required by quantum theory, to create the universe. This is the very definition of a circular argument. Greenstein wrote"The more I read (about the Anthropic conditions of the universe) the more I became convinced that such 'coincidences' could hardly have happened by chance. But as this conviction grew, something else grew as well...It was intense revulsion, and at times it was almost physicial in nature." He says that "in my own experience whenever the problem of the fitness of the environment is broached, most scientists respond neither with interest nor with opposition. They respond with a smile. They respond with a shrug. That is the most damning response of all. The problem has been rejected, and the rejection is instinctive, It is gut-level, unmediated by rational thought, and it takes place prior to the point at which any serious consideration is possible. Before anyone has had time to think, the subject has been dismissed." [p. 24 &25] What is this? These are "rational" scientists dispassionately evaluating the evidence? Since the 1800's the Biblical claims have been considered an absurdity in a rational world. Mankind's attention has been diverted from the real conflict for a couple hundred years. Greenstein acknowledges that the Biblical claims are no longer irrational. The fact of the existence of God is no longer really an issue, even if just subconsciously for most of the scientists. We are back in the Garden of Eden, at that point where Eve chose to eat the apple because she was seduced by the thought that she could be "as God". It was a very clear, and entertaining read. It displays the inner workings of the heart of science to day.
