A little piece of Acadiana.
Besides a good collection of everyday Cajun food, this book is rich in the history and lore of the area. Thanks to Eula Mae Dore and Marcelle Bienvenue, the history as well as the recipes of this area will not be lost.

My thoughts
A great title and great unofficial advertising on Emeril Live. But it could have been much more diverse. I relize that was not the point of the book. But there had to be some recipes that people comonly made but were not creole. I guess I would have liked one or two exotic recipes.

The real deal
My mamma's a Crochet, I am Catholic and my husband and I can each make a roux. I, also, am Cajun, know Marcelle and can attest to the authenticity of the recipes and accompanying stories. Many try to capitalize on the Cajun food craze, but few are the real deal. The only thing better than the recipes in Marcelle's book is enjoying them with she and her husband over dinner from their kitchen.

Why Haven't You Bought This Book?
Although I wasn't raised in Lousiana, I love the food, and I love this book. The home recipes and the family memoirs are too good to put down, in the kitchen or the easy chair. If you only buy one cajun cookbook, buy this one.

Being born born on the Bayou doesn't mean she can cook
I don't know where this woman learned to cook, but she sure needs to go back to school. I was born and raised in New Orleans and went to college in Lafayette, Louisiana so I know Louisiana cooking. Her recipes are trite and unimaginative. Do yourself a favor and buy a cookbook .... Save your money and avoid indigestion, don't use this book. END

Inspiration
Having been raised north of I-10 and not needing help with my cajun cooking, I love to read cookbooks all the same, even though cooking is not one of my favorite chores. Cajun Cooking For Beginners has inspired me to cook some of the old favorite dishes, using it's recipes for reference. My family thanks you.

A good book for **BEGINNERS**
The other reviewer completely missed the point. This is a starter's book, of course it will seem basic to someone from New Orleans. I was also raised in New Orleans, and,like most people here, I was raised cooking. However, those poor souls raised north of I-10 need some help. Ms. Bienvenu is a well respected culinary writer in the New Orleans area, and offers solid advice to the uninitiated.
